Prepare bacon as directed on package to desired crispness. Set aside to cool. Slice Roma tomatoes into medium slices. Sprinkle with pepper, if desired.
Spread 1-2 Tablespoons of dressing over each pita bread. Divide tomatoes and layer over dressing on pitas. Tear 3-4 bacon slices into bite size pieces over each pita. Sprinkle with 1/2 cup of mozzarella cheese.
Bake on pizza stone or baking sheet in 350 degree oven for 12 minutes or until cheese is starting to brown and pitas are crisped.
Before serving, mound a pile of baby lettuce in the center of each pita. Sprinkle a touch of balsamic vinaigrette on the lettuce (optional).
