Divide the crescent rolls in half and place them in 8x8-inch baking dish pushing seams together to make bottom crust.
Mix cream cheese, sugar, vanilla and egg yolk until well blended. Pour mixture on top of crust in baking dish. Place remaining crescent rolls on top to form the top crust. Brush with egg white and sprinkle on the topping.
Bake at 350°F for 30-35 minutes. This can be eaten right away, but best if allowed to cool first.
