Original recipe yields 1 serving
1 pound ground beef
1 small yellow onion, chopped
1 small green bell pepper, chopped
1 Tbsp of your favorite seasoning (more or less to taste)
1 box cornbread mix
1 can diced tomatoes and green chilies (spicy or regular)
1 can whole kernel sweet corn
1 package Kraft Shredded Cheese (Mexican is great!)

Mix the meat, onion, bell pepper and the seasoning in a skillet on the stovetop, brown completely and drain excess fat. Then prepare the cornbread mix according to package directions in a bowl on the side.

Now put 1/2 the meat mixture into an 8" round cake pan sprayed with nonstick spray. Now mix into the meat 1/2 the can of tomatoes and chilies, 1/2 the can of corn drained, and 1/4 of the package of cheese and mix well. Do the same with the rest of the meat and ingredients in a separate 8" round cake pan.

Now pour the prepared cornbread mixture onto the tops of both pans of meat.

Bake according to cornbread package directions. When done, sprinkle the remaining cheese onto both casseroles to let it melt and serve while hot. Slice like you would a pie.
