1 pkg (3.4 oz) Jell-O Vanilla Flavored Pudding (cheesecake flavor works well too)
1 tablespoon vanilla (1 teaspoon if you like less vanilla flavor)
2 3/4 cups flour
1/2 teaspoon salt
1 tablespoon baking soda
2 cups chocolate chips or 1 pkg. Baker's Chocolate, chopped, plus one milk chocolate baking size bar
1/2 cup walnuts or pecans (optional)

Mix sugars, butter and shortening until creamy. Add eggs, beat until light. Add pudding and vanilla. In separate bowl combine flour, salt and baking soda. Add to sugar mixture and mix until well combined. Mix in chocolate and nuts.
Scoop with a teaspoon, making 1 1/2 inch balls, roll between hands and place on greased baking sheet about 3 inches apart.
Bake in a preheated 365 degrees F oven for 9-12 minutes, depending on desired color. Let cool in pan and transfer to wire rack. You might need to play with the cooking time and temperature to get the desired cookie. The original recipe said to bake at 375 degrees F. I don't like my cookies that dark.
