Spray an 8 inch frying pan with cooking spray. Heat for about a minute over medium-low heat.
Beat eggs in a small bowl and pour into heated pan. Allow eggs to cook until they just begin to set. On one side of the pan, sprinkle chicken, onion, pepper and cheese. Add the salsa and fold omelette over to cover. Cook for an additional minute to a minute and a half.
While omelette finishes cooking, in a small bowl mix ranch dressing with a healthy dash of hot sauce. Mix well. Turn out omelette onto two plates and top with ranch dressing mixture. Serve immediately.
