Let's Make It
Place flour and salt in a large bowl and combine. Add shortening and "cut in" with pastry blender until mixture resembles corn meal (If you do not have a pastry blender, 2 butter knives will do the trick). Add water, 1 tablespoon at a time, until mixture sticks together in a ball and pulls away from the side of the bowl (use a fork).
Roll out one-half of dough at a time on a floured surface. Begin with pastry in a ball; flatten with hand, then roll from the center to edges with a floured rolling pin. Mend edges that crack as you go using a tiny amount of water.
Combine apples and lemon juice together in a bowl. Stir to coat apples with juice. Combine sugar, cinnamon, and flour in a small bowl. Stir into apples until coated.
Place apples in prepared pie crust. Dot with margarine, and place crust on top*. Bake in 425 degrees F oven for 10 minutes, then reduce heat to 350°F and bake 30-40 minutes, or until apples are bubbly and crust is browned.
