7 - 8 large potatoes, peeled and cubed
3 strips bacon, fried and crumbled (optional)
1 3/4 cups Miracle Whip
1 envelope ranch dressing mix
Salt and pepper to taste
1 small pkg. Kraft Velveeta Cheese

Let's Make It
Preheat oven to 350°F. Boil potatoes and drain well. Do not let potatoes get too tender or they will break up when stirring. They should not become "mashed". If using bacon, fry it while potatoes are boiling then set aside for later.
Place potatoes back in cooking pot, add Miracle Whip, ranch dressing mix, salt and pepper. Mix to coat but try not to stir too much. Add more Miracle whip if too dry.
Place potato mixture into 13x9 baking dish. Cut Velveeta cheese into slices and blanket over the potatoes.
Bake 10-12 minutes or until cheese is melted. Sprinkle crumbled bacon over potatoes. You can stir it up or leave as is to serve.
