1/2 lb ziti, rigatoni or other firm pasta (more or less, depending on how many people you are serving)
1 small onion, diced
1 small green pepper, diced
1-2 cloves garlic, minced
1 lb bulk Italian sausage, sweet or hot
Oregano, per your personal preference
1/2 lb fresh mushrooms, sliced
10-15 black olives, sliced (optional- but a must in my family)
28 oz traditional spaghetti sauce (use additional sauce if using more than 1/2 lb. pasta or if it you like it saucier)
1/2 lb shredded Mozzarella cheese
1/2 lb fresh Romano cheese, grated

Let's Make It
Preheat oven to 350F. In a large pot, cook pasta according to package directions. Drain and set aside.
In the same large pot, saute onions, peppers and garlic in a small amount of oil. Add sausage and oregano, and cook until browned. Add mushrooms, cook until slightly soft. Drain very well. Return to pot, and add olives, spaghetti sauce and pasta. Mix well. Mix in mozzarella cheese, mix again.
Pour mixture into baking dish and bake until cheese melts. Serve with fresh Romano and crusty garlic bread.
