Original recipe yields 1 serving
2 Tbsp butter
1 can chicken broth
1 can cream of celery soup (with 1/2 can water)
1/2 cup green pepper, chopped
1/2 cup onion, chopped
1/4 cup mushrooms (optional)
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/8 tsp Accent (or Mrs. Dash)
1 pkg frozen spinach (thawed- with liquid)
1 cup shredded cheese (cheddar or your favorite)
2 pkg Stove Top Stuffing

1: In a large kettle, melt the butter. Add chicken broth, cream of celery soup and 1/2 can water. Add the chopped veggies and seasonings, simmer 2-3 minutes.

2: Add the thawed spinach (with the juice) and the cheese. Stir to blend. Add the stuffing, blend well. Pour this into a lightly sprayed casserole dish.

3: Bake uncovered at 350°F for about 25 minutes (until lightly browned).
