Mix first 5 ingredients and shape into balls on wax paper lined cookie sheet. Flatten with bottom of a glass.
Bake about 8 minutes at 400°F and then let cool.
Meantime, mix the coating: Pour bag of chocolate chips in microwave safe bowl and melt in microwave about 2 minutes. Stir till smooth. Add extract and vegetable shortening. (Shortening gives a nice sheen, but can be left out.)
