Original recipe yields 1 serving
4 tablespoons oil
1 cup white rice
1 clove garlic, minced
1 package Spanish rice mix or Mexican rice mix
1 can diced tomatoes
2 cups chicken stock (or water)
1 cup water

Let's Make It

In a large pot with a lid, heat up oil and brown the rice with the garlic.

Add the rice mix and the tomatoes. Add stock and bring to a raging boil.

Lower temp to the lowest setting you can and cover. Half way through the cooking stir and add the water.

After it's done cooking, let rest for about 5-10 minutes with the lid off.
