Original recipe yields 1 serving
1 small green bell pepper
1 small yellow onion
1/2 stick butter
3 cans chicken stock
1 pkg noodles
cans 1 or 2 Ro*Tel
1 jar sliced mushrooms
2 Tbsp Worcestershire sauce
1 can cream of mushroom soup
1 large can chicken breast meat (can use boiled or grilled chicken breast)
1 lb Velveeta Cheese, cubed

Chop pepper and onion and saute in butter.

In separate boiler, boil chicken stock. Once stock is boiling, add noodles and cook until tender. Do not drain the noodles.

When noodles are done, add 1 (or 2) cans Ro*Tel (some people like more spice). Also, add sliced mushrooms, and Worcestershire sauce. Cook 5 more minutes.

Then remove from heat and add cream of mushroom soup, cut-up chicken, and Velveeta cheese. Stir until the cheese melts, and then combine the sauteed onions and peppers.

Pour into buttered 9 x 13 casserole dish. Bake covered for 40 minutes at 350 degrees F. Serve.
