Original recipe yields 1 serving
1 cup carrots, sliced
1 lb roast cut into cubes, or stew meat
1 cup onions
2 Tbsp garlic
Salt (optional)
Black pepper
2 cups water
2 cups Minute Rice (white or brown)
Brown gravy mix - enough for 2 cups

Let's Make It
Wash and slice carrots. If using a roast, cube the meat.
Brown meat thoroughly on all sides with the onion and garlic in a pressure cooker. When the meat is done, remove the mixture to a bowl.
Put the metal steamer rack in the bottom of the pot. (Putting this in will keep the meat from burning.) Return the meat mixture to the pot and add the carrots, salt & pepper. Add the water. The water should cover the meat.
Let the water heat up before the lid is put on the pressure cooker. Total cooking time in the pressure cooker should be 45 to 50 minutes.
Let the pressure cooker cool off naturally. This should take about 15 minutes. Forcing it to cool seems to toughen the meat. Cook the Minute Rice. Once the pressure cooker is cool down, take the liquid and use with the gravy mix to make 2 cups of gravy. (Sometimes I have to add water). Serve over rice.
