Wash chicken breasts, pat dry, then lightly pound them between two pieces of wax paper. Brush one side of each chicken breast with mustard. On top of mustard, place one slice Polly-O Mozzarella Cheese, one strip green pepper, and one strip red pepper, on each chicken breast.
Roll each chicken breast up and secure with toothpick, if need be. Place each rolled chicken breast side-by-side in a shallow microwave dish. Pour broth over the chicken breasts.
Cover with plastic wrap or wax paper and microwave on 70% power for 15 minutes. Check to make sure that the chicken is no longer pink inside. Enjoy!
