Original recipe yields 1 serving
5 large potatoes, peeled and cubed
1 carrot, sliced thin
1 onion, chopped
1 can chicken broth
1/2 lb bacon, fried crisp and crumbled
1/2 lb smoked ham, cut into cubes
1 large can cream mushroom soup (you can use any type of cream soup)
1 lb Velveeta Cheese

In a large soup pot, add potatoes, carrot, onion and just enough water to cover. Bring to a boil and boil until tender crisp.

Add the chicken broth, bacon, and ham and simmer an additional 30 minutes, covered. Remove lid and stir in the cream soup, and stir until smooth.

Cube the Velveeta Cheese and with the soup on medium heat, stir into the soup until melted and smooth. DO NOT BOIL! Heat through and serve hot.
