Open biscuit dough container and separate biscuits. Take 1 biscuit and flatten slightly on a cookie sheet. Place a little over a tablespoon of pie filling in center of biscuit and cover with 2nd slightly flattened biscuit. Seal the edges so that the 2 biscuits take on a dumpling shape. Do the same with the remaining biscuits and pie filling.
Follow the directions for baking the biscuits from the container (approx. 8 to 11 minutes depending on your oven). Remove from cookie sheet to cool slightly.
Sprinkle with a mixture of cinnamon and sugar if you wish. Serve warm. Best served with vanilla ice cream or Cool Whip Whipped Topping.
