Preheat oven to 350°F. Mix cream cheese, sugar and vanilla until creamy.
Push 1 package crescent rolls in bottom of 8x8 pan, seal perforations, spread cream cheese mixture over crescent rolls. Layer thinly sliced apples on top of cream cheese mixture. Lay second tube of crescent rolls on top of apples, pinching together perforations. Sprinkle with cinnamon and sugar.
Bake for 30-35 minutes. Sprinkle with cinnamon and sugar.
