Preheat oven to 375°F. Cut chicken breasts into two bite pieces, set aside.
In food processor, combine parmesan cheese, Stove Top Stuffing and seasoning packet. Pulse until the consistency of bread crumbs.
Set up 3 shallow bowls. In first bowl, put seasoned flour; in second bowl, beat 2 eggs; in third bowl, put Stove Top bread crumbs and stir in canola oil till crumbly. Roll chicken bites in flour, then egg, then Stove Top/parmesan mixture. Place on ungreased baking sheet.
Bake for 15-18 minutes, or until chicken is cooked through.
