Wash and dry turkey. Mix salt and pepper in small bowl and set aside. Wash and cut apples in slices and set aside.
Rub inside of turkey with small amount of salt and pepper mixture. Place apples inside turkey.
Pour champagne in measuring cup (2 cup) size. Inject turkey starting with legs working all around turkey, use all of champagne, making sure to inject the breast until really full. Go all around turkey more than once with injected champagne.
Rub olive oil and salt and pepper on turkey. Place in cooking bag and cook according to weight.
