Original recipe yields 1 serving
8 eggs
1/4 cup water
2 Tbsp flour
Salt and pepper to taste
8 oz feta cheese, crumbled
2 cups low-fat cottage cheese
1 pkg (10 oz.) frozen spinach, thawed, and well drained - or use fresh spinach, cooked, well-drained, and chopped - or you can use chopped broccoli
4-5 mushrooms, sliced (optional)
1/4 cup shredded parmesan cheese

Preheat oven to 350 degrees F. Mix the eggs, water, flour, salt, and pepper. Add feta cheese, cottage cheese, then the spinach (and mushrooms, if desired).

Place the mixture in a lightly greased pie pan or casserole dish. Sprinkle parmesan cheese on top.

Bake for 55-60 min or until eggs are set.
