Preheat oven to 500 degrees F. In roasting pan - rub 1/2 cup of salt into meat. Make holes in fat areas of meat - fill with slices of garlic. Place slices of garlic into meat by the bone - by inserting into gaps.
Combine butter and minced garlic together and 1/4 cup salt and pepper. Pour over meat. Add remaining salt and slices of garlic to top.
Put into oven. Cook 15 min per pound. First fifteen at 500 degrees F to sear juices in - then turn down to 350 degrees F. Take out of oven when done and let sit for 15 min for juices to settle. Slice into 1 inch thick slices.
