Original recipe yields 1 serving
1/2 cup honey, molasses or maple syrup
1/4 cup canola oil
2 cup old-fashioned rolled oats, not the quick cooking variety
1/2 cup your favorite nuts
3/4 cup two of your favorite dried fruits (optional)
1/3 cup dried banana slices (optional)

Preheat oven to 250 degrees F. Lightly grease with canola oil cooking spray a large baking sheet with sides and set aside.

Combine the honey and oil in a small saucepan and heat just until hot or use the microwave. Place the rolled oats and nut in a bowl and mix. Add the honey-oil mixture until well combined.

Spread the granola mixture evenly on the baking sheet. Bake about 40 minutes, or until light golden.

It will still be soft when it comes out of oven, but it will harden as it cools. Allow the granola to cool completely. Add the optional dried fruit to the granola and mix well. Store in an airtight container or a zip-top bag.
