1/2 lb shredded cheddar cheese (sharp adds more flavor)
1 whole cooked chicken shredded (you can also use 2-3 chicken breasts shredded), divided

Let's Make It
Preheat oven to 350°F. Cook rice. Grease a 9x13 casserole pan with a small amount of butter. Spread rice into bottom of pan and press down firmly to flatten with the back of a spoon.
While rice cools, mix sour cream, cream of mushroom soup, and mayo in a sauce pan and heat thoroughly. Add a handful of cheese and stir until melted. Layer shredded chicken on top of rice. Pour sauce mixture over chicken. Sprinkle with leftover cheddar cheese and season to taste.
