Combine strawberries with approx. 1/2 cup sugar (or to taste) in bowl. Stir strawberry and sugar mixture until strawberry juice and sugar combine to create a light "syrup" and mixture is somewhat pourable.
Put strawberry mixture in refrigerator to get a bit cold (at least under room temperature) for approx. 10 min or in freezer for no longer than 5 minutes.
When mixture is cool/cold, remove from refrigerator. Take ice cream sandwiches out of freezer. Place them, 1 each, on separate dessert plates. Spoon strawberry mixture over ice cream sandwich so none of the sandwich is visible. Top with COOL WHIP whipped topping, if desired. Serve.
