Bake chicken at 350 degrees F for 45 min to 1 hour. Cut into bite size chunks. Mix together crushed crackers, oleo and poppy seeds. Mix together the soup and the sour cream.
Put the cracker mixture in the bottom of a 9x13 glass baking dish to form a crust. Save a little to put on top. Put chicken bites on top of the cracker mixture and pour the soup/sour cream mixture over the top. Put the rest of the cracker mixture over the top.
Bake at 350 degrees F for 1 hour. Serve over white rice.
