1 cup Kraft Shredded Cheese (medium cheddar or 4 cheese)
1/4 cup Kraft Sharp Shredded Cheese
2 cloves garlic, diced
3/4 cup vegetable oil
Salt & pepper to taste
[Optional]: Peppers, tomatoes, artichoke heart, etc.

*** How many potatoes do you add in the beginning?
In skillet on med heat, add oil and bacon. When one piece of potato begins to cook add rest of potatoes. Cook on med heat and cover skillet for 15 - 20 minutes (stir occasionally). Remove lid and fry for a couple min. Oil should be absorbed, but if not, drain, and leave approx 1/4 cup oil in bottom.
Beat eggs and 2 Tbsp. of water till well mixed and fluffy. Slowly pour over potatoes, add diced garlic. As egg is jelling, gently lift edges of "pie" the way around. Cut an X and turn over each quarter, cook approx 3 min.
Turn off heat and remove to cool burner, add any optional items, and sprinkle cheese over entire "pie". Re-cover for 8 minutes.
