Original recipe yields 1 serving
2 large boneless skinless chicken breasts, cut up in bite size peices
2 Tbsp oil
2 cups Minute Rice
2 chicken boullion cubes
1 can mushrooms, diced
1 can cream of chicken soup
1 can cream of mushroom soup
3 cups cheddar cheese (1 cup should be saved for topping)
1 small onion, diced
1 tsp garlic (more or less as desired)
Salt, pepper to taste

Let's Make It
Preheat oven to 350°F. Cook cut up chicken in oil. Drain. Prepare rice as directed, adding bouillon cubes to water.
Mix all ingredients (minus 1 cup cheese) in large bowl. Spread into 13x9 inch glass or metal pan.
Bake covered for 30 minutes. Sprinkle remaining 1 cup of cheddar cheese on top and bake uncovered for an additional 10 minutes.
