1. Preheat oven to 350°F and prepare roasting pan with non stick cooking spray. Place chicken in roaster.
2. Cut each lemon in half and place both halves inside chicken. Using fingers, gently separate the skin on the breast of the chicken and place the sprigs of thyme under the skin. Place a sprig on each side of the breast bone and lay 2 sprigs on each leg. Place 1 Tbsp. of butter on top.
3. Cover with lid and place in oven. For the last 30 minutes, remove the lid for a crispy golden skin. Roast until juices run clear.
