Original recipe yields 1 serving
1 lb tri-color pasta
1 small can artichoke hearts (optional)
1 cucumber, chopped medium,
1/2 cup shaved carrot
1/2 cup pitted calamari olives, halved
4 sticks celery, chopped medium
1 medium red onion, sliced thin
1 cup shredded cheddar cheese
1/4 cup balsamic vinaigrette
1/8 cup extra virgin olive oil
1/4 cup parmesan cheese, grated fresh

Boil pasta until tender, drain, and let cool.

Cut artichoke hearts around 1/2-inch long and add to pasta along with the cukes and carrots. Olives should be halved and added along with the celery, onion and cheese. Mix well by folding all ingredients in.

Add balsamic vinaigrette and olive oil. Top with freshly grated or canned parmesan cheese. Chill and serve.
