Original recipe yields 1 serving
6 boneless chicken breasts
1 package frozen broccoli florets
2.5 cups Minute Rice
1.5 cups milk
1 package Velveeta Cheese, cut into cubes
1 package shredded cheddar cheese
1 package fried onions

Let's Make It
Brown chicken breast in skillet until thoroughly cooked. Add broccoli in skillet and simmer on low heat to allow broccoli to steam for 5 minutes or until almost done. Prepare rice by instructions on box. In medium sauce pan put milk and Velveeta Cheese and cook until cheese is melted stirring occasionally.
Lightly grease a 13x9-inch baking dish with butter or cooking spray, pour rice into baking dish. Top with chicken and broccoli and pour the cheese over chicken and rice. Sprinkle cheddar cheese and fried onions over top.
Bake in oven preheated at 350°F for about 30 minutes.
