Original recipe yields 1 serving
2 lb hamburger
1 small pepper of choice (I use a habanero pepper), diced
1 small onion, diced
1 can refried beans
2 cans enchilada sauce, divided
2 package s soft flour tortillas
8 oz packages Kraft Shredded Monterrey Jack Cheese
10-12 slice d jalapeno peppers
Optional sides
Spanish rice
1 can refried beans
Shredded lettuce
Diced tomatoes

Let's Make It
Fry ground beef till brown, drain. Add diced pepper and onion. Then add one can refried beans to hamburger mixture, and simmer on low.
While this is simmering, pour half of 1 can of enchilada sauce on bottom of a long square casserole dish (this keeps it from sticking). Then fold the tortillas in half, and line bottom of pan. Then spread some of the meat and bean mixture over tortillas, then cheese, then tortillas, etc. After layering is finished pour remaining can and a half sauce over entire casserole. Top with leftover cheese, and the sliced jalapenos.
Cover with aluminum foil and bake for 45 min at 350°F.
