Original recipe yields 1 serving
4 cups unbleached all purpose flour
8 teaspoon s baking powder
2 teaspoon s sugar
1 teaspoon salt
1 cup unsalted butter, cut into 1/2 inch chunks
1 3/4 cups chilled whipping cream, divided
2 cups grated sharp cheddar cheese (about 8 ounces)

Let's Make It
Preheat oven to 425°F. Blend flour, baking powder, sugar and salt in a processor. Add butter and cut in, using on/off turns, until the mixture resembles coarse meal. Add 1 1/2 cups cream, blend until dough comes together in moist clumps, adding more cream by tablespoons if dough is dry. Transfer to a large bowl. Gently mix in the cheese.
Turn dough out onto a lightly floured surface. Knead dough no more that 30 seconds to bring together. Pat dough out to 1 inch thickness. Using a 2 inch round, cut out biscuits, gathering scraps, pat dough out and cut more biscuits until all of the dough has been used. Or cut out square biscuits.
Transfer biscuits to two large ungreased baking sheets, spacing apart. Bake until puffed and golden, about 15 minutes. Transfer to a rack and cool.
