Original recipe yields 1 serving
1 lb ground beef
1 medium onion, sliced or diced
2 cups cold water
1 can (14 oz.) stewed tomatoes, cut up
3/4 cup sliced carrots
3/4 cup sliced mushrooms
1/2 cup quick or pearl barley, uncooked
2 cloves garlic, minced
1 tsp dried oregano
Salt & pepper
1/2 lb Velveeta Cheese, cubed

Brown meat and onion in a large skillet and drain.

Stir in water, tomatoes, carrot, mushrooms, barley, garlic and oregano. Bring to a boil. Cover and reduce heat. Simmer 10 min. or until barley is tender. Season (salt and pepper) to taste.

Remove from heat and stir in Velveeta Cheese spread until melted.
