Original recipe yields 1 serving
1 jar real bacon bits or 1/2 lb. bacon, fried crisp
5 lb new red potatoes
1 stick butter, softened
2 pkg (8 oz. each) cream cheese, softened
1/2 - 1 cup milk
4 Tbsp dried chopped chives
1 tsp garlic powder or 2 cloves of garlic, chopped fine
Adobo seasoning with pepper to taste
2 - 3 cups shredded sharp cheddar cheese

Let's Make It
Preheat oven to 350 degrees F. Fry bacon if you use fresh meat. Boil potatoes in large pan on top of the stove until you easily poke a fork into them. While letting potatoes cook, let cream cheese and butter sit out to soften.
After potatoes have cooked thoroughly, smash in a 13x9x3" baking pan. Add softened butter, cream cheese, and milk. Mix together until smooth. Add chopped chives, garlic powder or cloves, and Adobo seasoning to taste. Stir until mixed thoroughly. Sprinkle the shredded cheddar cheese on top of the potatoes. On top of the cheese sprinkle the bacon (which ever you choose to use).
Put prepared potatoes into oven for 1 hour or until the cheese if completely melted and just starting to brown.
