Pumpkin Mix
4 eggs
1 2/3 cups sugar
1 cup vegetable or canola oil
1 can (16 oz.) pumpkin
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1 tsp baking soda
Icing
1 pkg (3 oz.) cream cheese, softened (recommend not fat-free)
1/2 cup margarine or butter
1 tsp vanilla
2 cups powdered sugar

Beat together eggs, sugar, oil and pumpkin until light and fluffy. Stir together flour, baking powder, cinnamon, salt and baking soda. Add to pumpkin mixture and mix. Spread batter in ungreased 15x10x1” pan.

Bake at 350 degrees F for 25-30 min. Cool and frost.

Cream Cheese Icing:

Blend cream cheese and margarine/butter. Stir in vanilla. Add powdered sugar, a little at a time, beating well until mixture is smooth.
