Wash all fresh veggies. Seed peppers and tomatoes. Drain and rinse beans, peas, and corn. Set aside.
Finely chop all fresh veggies so that no piece is much bigger than a piece of the shoepeg corn. Add beans, peas, and corn to chopped veggies. Mix all together with Italian dressing. Add cilantro to taste.
Serve as a dip with tortilla chips or mix with cold salad Rotini for great pasta salad.
