Original recipe yields 1 serving
Cake:
1 3/4 cups sugar
1 1/4 cups oil
4 eggs
2 cups flour
2 tsp baking powder
1 tsp salt
2 tsp soda
2 tsp cinnamon
3 cup grated carrots
1/4 cup chopped nuts
Icing:
1 pkg (8 ounce) cream cheese
1/4 cup butter
2 tsp vanilla
1 pound box powdered sugar
Coconut extract to taste

Cake:

Cream sugar and oil. Add eggs, one at a time. Sift flour, baking powder, salt, soda, and cinnamon together. Add to first mixture. Fold in carrots and nuts.

Bake in three 9-inch cake pans at 350 degrees F for 20-25 min.

Cream together cream cheese and butter. Mix in vanilla, sugar, and coconut.
