2 package s (4 serving size each) Jell-O Lemon Flavor Gelatin (lime is also good)
2 small cans crushed pineapple in juice
1 cup boiling water
1 pint heavy whipping cream
1 package (8 ounce) Philadelphia Cream Cheese (brick)

Let's Make It
Mix sugar, Jell-O, crushed pineapple and boiling water in a sauce pan. Bring mixture to a full boil. Remove from heat and let cool till the consistency of syrup.
When Jell-O mixture is like a syrup, whip the whipping cream till doubled and stiff. Cream in the cream cheese. Carefully mix in the Jell-O mixture till well blended.
Spray a Jell-O mold or any serving dish with a non-stick cooking spray (not with flour) Arrange cherries in mold or in dish. Carefully pour mixture in. Let set for at least 2 hours to set (overnight is best).
