Bertha's Coconut Icing

Original recipe yields 1 serving
2 cups sugar
1 large can carnation milk (undiluted)
1 pound Baker's Angel Flake Coconut
1 tsp lemon extract (may use vanilla extract if you like)

Let's Make It

Mix sugar and milk add coconut. Place over med heat on top of stove. Stir constantly bring to a boil. Boil for seven minutes (keep boiling yet adjust heat to keep icing from popping on you and burning your hands).

Remove from heat and add extract stir well. Let sit for a short while until icing will stay on cake, maybe about twenty minutes.

Ice cake as you would an ordinary cake -- icing must be warm or it will not go on cake.
