Original recipe yields 1 serving
1 cup 2% evaporated milk
1 cup pumpkin puree (not pie filling if using canned)
2 Tbsp granulated sugar, or 1 pkg. Sweet 'n Low
1 egg
1/4 tsp ground nutmeg
1/4 tsp ground ginger

Preheat oven to 325 degrees F. In blender or food processor, combine milk, pumpkin, sugar, egg and spices. Process until well blended.

Pour into 4 large or 6 small custard cups.

Bake in preheated oven for about 30 minutes or until knife inserted in center comes out clean. Serve warm or cold.
