Original recipe yields 1 serving
1/2 cup extra-virgin olive oil
2 large cloves garlic, minces
4-5 medium fresh tomatoes (about 1 pound) seeded and chopped
1/2 cup chopped red or sweet onion
1/3 cup fresh basil, coarsely chopped
1-1 1/2 Tbsp balsamic vinegar
1/2 tsp salt
1/2 tsp ground black pepper
8 (1/2-inch-thick) slices crusty Italian bread
1 cup grated mozzarella cheese
Parmesan or feta cheese (optional)

In a small bowl, combine the oil and garlic; let stand for 15 minutes. In a medium bowl, combine the tomatoes, onion, basil, balsamic vinegar, salt, pepper, and 2 tablespoons of the garlic mixture. Stir well to blend and let stand for 20 minutes.

Preheat the oven to broil. Brush both sides of the bread slices with the garlic-oil mixture. Place on a baking sheet. Broil 5 inches from the heat, turning the slices until each side is lightly toasted.

Spoon the tomato mixture onto each bread slice and top with mozzarella cheese. Add a sprinkling of parmesan or feta cheese, if desired. Return the baking sheets to the oven and broil until the cheese is melted and the tomato mixture is warmed.
