1/4 cup semisweet chocolate chips
1/2 cup walnuts
24 ounces ricotta cheese
3/4 cup sugar
1 tablespoons vanilla
18 cannoli shells

Finely chop chocolate chips, set aside. Finely chop walnuts, set aside.

In mixing bowl, combine ricotta, sugar, vanilla. Depending upon the firmness of the cheese, stir or beat until smooth. Fold in chocolate chips.

Fill purchased cannoli shells. Dip each end in chopped walnuts. Refrigerate. Best served same day.
