Cream shortening; add sugar, egg, sour cream and salt. Combine flours and baking powder. Add dry ingredients to shortening mixture. Mix together with fingers until it resembles the consistency of shortbread.
Divide dough in two. Peel and slice apples and zucchini. Combine apples, zucchini, sugar and cinnamon. Pat half of mixture in 8 x 8 pan; place apples and zucchini over bottom layer of dough, sprinkle with sugar and cinnamon. Add last half of dough on top.
Bake in hot oven at 400°F (200°C) for 10 minutes, reduce heat to 350°F (180°C) and bake until brown. Serve with ice cream or whipped cream.
