Original recipe yields 1 serving
1 pkg chorizo sausage
1 cup diced sweet onion
1 carrot, diced
4 yellow bell peppers
1 egg
1/2 cup Italian bread crumbs
2 cups black bean/corn salsa
1 pkg blue tortilla chips

Brown and drain sausage, set aside. Caramelize onion and carrot and set aside.

Slice off a little from bottom of peppers to sit flat. Cut off tops and set tops aside. Pre-cook pepper in microwave with a touch of water for 3 minutes, 80 setting.

Mix sausage, egg, onion, carrot, and bread crumbs in bowl. Stuff mixture in peppers to top.

Cook in microwave until peppers are soft, approx. 5 minutes on 80 setting. Place pepper on dinner plate, surround with salsa and layer chips on plate edges.
