1. Beat sugar and butter to cream. Add eggs 1 at a time and beat. Add baking soda and water, spices, molasses, salt, vanilla and nuts.
2. In a separate bowl, mix fruit with 1 cup of flour. Alternating, add floured fruit & rest of flour to butter mixture, stirring after each addition. Batter will be very thick.
3. Using wedding cake type pans and fill each pan 3/4. Bake as noted below. Check with large needle for doneness. When needle inserted into center of cakes comes out clean, cakes are done. Times below are quickest time, check each 10 minutes until cakes are baked.
