Cook onions and mushrooms in 2 Tablespoons oil in a 12" cast iron skillet until onions soft and mushrooms have caramelized. Remove from heat; keep warm.
Add 2 Tablespoons oil into skillet over medium high; add potatoes and fry until golden, 5-7 minutes. Add the remaining oil on top and flip; continue cooking until golden, 4-6 minutes.
Scatter cheese on top followed by the onion mixture, ham, salsa, and chili. Bake 10 minutes until warm.
Serve this like you would a chili bar. Serve hash browns with all the fixings on the side.
Try pickled jalapenos on top to add spice
