Reserve 1 Tbsp. onions for later use. Melt butter in medium skillet on medium heat. Add garlic, poultry seasoning and remaining onions; cook 2 min., stirring frequently. Add chicken and cranberries, cook and stir 3 min. or until heated through.
Microwave VELVEETA and milk in microwaveable bowl on HIGH 1 to 2 min. or until VELVEETA is completely melted and mixture is well blended, stirring every 30 sec.
Split potatoes. Top with chicken mixture, VELVEETA sauce and reserved onions.
