Heat oil in large skillet on medium-high heat. Add chops; cook 4 to 5 min. on each side or until done (145°F), adding white parts of onions, garlic and ginger to skillet for the last 2 min. Remove chops from skillet.
Add soy sauce to skillet; stir to scrape any browned bits from bottom of skillet. Return chops to skillet.
Combine stuffing mix, hot water and dressing; spoon around edge of skillet. Cover; cook 5 min. or until stuffing is heated through. Remove from heat. Sprinkle with green parts of onions.
Serve with hot steamed broccoli or snow peas.
