Wash sweet potatoes and use a fork to poke holes on the tops and bottoms.
Place in a shallow dish and bake for about 1 hour and 10 minutes.
When about 10 minutes remain on the sweet potatoes add the apple juice and the butter to a saucepan and bring to a boil.
Immediately stir in the cranberries and the stuffing mix.
Mix thoroughly, cover and remove from heat.
Slice open sweet potatoes and mash the insides.
Add the stuffing mixture to the inside of the sweet potato.
The sweet potatotes provide a smart base for this delicious side dish. The apple juice adds a touch of sweetness and a good source of vitamin C, while the sweet potato is rich in vitamin A.
