Add milk to stuffing mix in large bowl; stir just until stuffing mix is moistened. Add all remaining ingredients except bacon; mix just until blended.
Shape into 10x6-inch loaf in 13x9-inch baking dish sprayed with cooking spray. Top with bacon, placing slices lengthwise over top of loaf and overlapping slices as needed to completely cover top of meatloaf.
Bake 55 min. to 1 hour or until done (165ºF). Let stand 10 min. before removing meatloaf from dish and slicing to serve.
Allowing the meatloaf to stand 10 min. before slicing it helps to retain the juices in the cooked meatloaf.
Serve with hot cooked herbed mashed potatoes and steamed corn.
